Ingredients

Ingredients

  • 7 small yellow potatoes
  • 1 tablespoon butter
  • 2 tablespoons chopped fresh herbs
  • 1/4 teaspoon white pepper

Directions

Put 1 cup water and some salt into a saucepan with a steamer basket inside and bring to a boil.

Using a paring knife, peel the potatoes, turning as you peel off the skin, into a football shape.

Add potatoes to the basket and steam until potatoes are knife-tender and the water has evaporated, about 20 minutes.

Transfer the potatoes to a bowl and add 1 tablespoon butter, chopped herbs, and white pepper. Toss to coat. Serve warm.

Tried these potatoes tonight........they were DELICIOUS and easy. This will be my go to potato recipe from now on.

Watch the water level of your pot. I was shocked to find a smoked blackened pot when I lifted the steamer basket! Next time I would add more water. My potatoes may have been larger in size but they were overdone on the outside underdone on the inside. . Still tasted good, just smoked tasting!

This recipe didn't turn out exactly as I planned. Perhaps my potatoes were too large, or my flame was on too high... I ended up smoking these potatoes because all of the water evaporated in the pot, I was shocked to find a blackened pot when I took the steamer basket off!. The potatoes ended up slightly overcooked on the outside, undercooked on the inside. They still tasted good--but smoky! I highly recommend you monitor the water level in your pot.
