                I made this recipe a few months ago for a family picnic.  But I cheated - - I bought frozen pre-grilled chicken breasts in the grocery store because I didn't have time to grill turkey.  I thawed them then heated the breasts in a skillet in olive oil; it seemed to make the "grilled" flavor a bit more authentic.   I split the ciabatta and browned the cut side in butter/olive oil, assembled the sandwiches as the recipe instructed.  Everybody loved them - - especially the men!

  • Ciabatta roll, split
  • Olive oil
  • 1 thin turkey cutlet
  • Coarse salt and ground pepper
  • Mozzarella, thickly sliced
  • Tomato, sliced

Directions

Heat a grill or grill pan to medium-high. Brush split roll with oil and toast on grill. Season turkey with salt and pepper, brush with oil, and grill until cooked through. Layer mozzarella, tomato, and turkey on bottom half of roll; add basil. Sandwich with top half of roll.
