  • 1/3 cup plus two tablespoons vegetable oil

  • 1 1/2 teaspoons coarse salt
  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander seed
  • 3 teaspoons poppy seeds
  • 6 cloves
  • 2 bay leaves
  • 1-inch piece cinnamon stick
  • 1 1/2-inch piece fresh ginger
  • 1/4 cup shredded unsweetened coconut
  • 1 cup coconut milk
  • 2 cups basmati rice
  • 2 1/3 cups water
  • 2 small russet potatoes, peeled and chopped
  • 2 medium carrots, peeled and chopped
  • 10 ounces frozen peas

Directions

In a blender, combine 1/3 cup oil, onion, salt, spices, ginger, shredded coconut, and 1/4 cup coconut milk.

Heat remaining 2 tablespoons vegetable oil in a large straight-sided skillet with a tight-fitting lid. Toast the rice until lightly golden. Add the spice puree to the rice. Stir until aromatic, about 3 minutes.

Add remaining coconut milk, 2 1/3 cups water, potatoes, and carrots to the skillet. Bring to a simmer, cover, and simmer until water is absorbed into the rice, about 15 minutes. Remove from the heat, add the peas, cover, and steam until the peas are warmed through, about 5 minutes.

                Hey,
                Thank you for these amazing article I really like these and I never tried these kind of recipe surely going to try this in this coming weekend because i have invited some guests in my home,
                Can you please tell me that is it safe to buy saffron from that store because i'm going to use that in recipe for better taste, What do you say is it fine ?
                Your article made me think before buying and using it from any where that is why i'm asking i hope you can reply me quickly
                Please also mention quantity of using so i will follow you

                I have to disagree with all of the other comments, the recipe is right nothing is wrong she ysed 1/4 cup at first and added the rest later with the water...
                Anyway for me it was nice fluffy rice beautiful spices, but I couldn't taste the coconut milk or see the effect of using it,  mean if I only used water it will taste the same. I tried this recipe in the first place to use the coconut milk I have..well maybe the milk I have isn't good...I don't know. Thanks for the effort anyway.

                Terrible!  Don't waste your time & $ making this!  It's not what I know as Biryani!  Tastes too sweet, even though I used unsweetened coconut and coconut milk!!!  Threw it all away.  A waste.  This is not a Martha recipe but one of Lucinda Quinn Scala's from Mad Hungry.  Her recipes are not reliable.  Made her blueberry bran muffins and they were horrible!!! Dry, tasteless, cardboard.  Threw them all away as well.  Beware of her recipes.  Martha's recipes are reliable.

                On the show they used 6 cloves of garlic...the way the recipe is written on the website they say to use 6 cloves. Very different tastes. Also, on the show, Lucinda adds 1/4 cup of coconut milk, this recipe calls for 1 cup. This will definitely affect the final results. Which one is correct?

                i make basmatic rice a lot and in this recipe everything clumped together.  maybe i shouldn't have rinsed the rice earlier today and let it dry.  it tastes wonderful, but i could use it as wallpaper paste it's so thick.  such a shame.
