1/2 cup chopped fresh cilantro or parsley

1 whole chicken, about 3 pounds, cut into 10 pieces
2 cans garbanzo beans or white beans, drained
2 pints cherry or grape tomatoes
Cook's Notes
Boneless chicken breasts can also be used in this recipe. Cook time in the oven will be about 20 minutes.

Directions
Preheat oven to 450 degrees.
Mix the marinade: olive oil, garlic, paprika, cumin, red pepper, cilantro (or parsley), salt, and pepper in a bowl. Using zip-top bags or a large container suitable for marinating, combine marinade, chicken, beans, and tomatoes, ensuring that everything, especially the chicken, is evenly coated with the marinade. Let marinate a few hours, all day, or overnight.
When ready to cook, dump contents into large roasting pan. Roast 20-30 minutes, or until chicken is cooked through and browned, and tomatoes have burst and caramelized.

I love this recipe! My mom used to make it all the time when I was growing up and it is something I keep in my cooking rotation now that I live away from home. I usually do less salt than the recipe calls for. Also, I like to do less chicken and add more veggies such as mushrooms, eggplant, zucchini or yellow squash.

Marinated overnight. Loved the recipe, tasted great except 2 tablespoons salt was to much especially for folks with high blood pressure. Will reduce salt to sea salt at 1 tablespoon or use salt substitute. Very easy to prepare. Will also add additional can of white beans. I would suggest using soaked dry white beans or rinse can beans to remove some of the salt before adding to marinate. Cooked until chicken was browned. Flavor was awesome and chicken was perfect.

This was a great tasting and easy to prepare meal. The tomatoes and garbanzo beans roasted with the chicken had a great flavor. I did use less salt than the recipe said, as others have noted.

I have made this recipe three times now. I love it. I also halve the salt and I marinate it overnight. This is THE BEST!

This was WONDERFUL! It will definitely be a regular in my dinner rotation. Based on previous reviews I used about 1 1/4 TBSP of salt (I use sea salt) and it tasted perfect. I definitely wouldn't add more. I also had 3 lb of boneless skinless chicken thighs on hand so I used those. I used only the smoked paprika and marinated it for 3 hours. Perfection!

My whole family loved this. I did do just 1 TBS of salt and I was glad. The chick peas hold the salt the most. I also used a smaller amount of crushed red pepper, to accommodate a 5 year old's palate. It was very tasty!!

I thought there was way too much salt in this recipe. I would cut it to 1 tablespoon instead of 2.

I am somewhat skeptical of recipes I watch on TV (sorry Martha), but this one seemed so simple yet delicious. Guess what - it was! Having recently returned from Spain, I decided to try it for my husband. He loved it! It was redolent of Spanish flavors. It's worth using high quality spices, especially the smoky paprika, since so much is used. I used only chicken thighs and larger grape tomatoes. Very easy with layers of flavors recipe-it's a keeper!
