  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 3/4 cup all-purpose flour
  • 10 cups milk
  • 1 tablespoon plus 1 1/2 teaspoons coarse salt
  • 1 1/2 teaspoons freshly ground nutmeg

Directions

Melt butter in a large saucepan over medium-high heat. Add flour and stir until absorbed, about 1 minute. Slowly whisk in milk, salt, and nutmeg. Bring to a boil and cook, stirring, until thickened, about 5 minutes. Remove from heat and let stand 15 minutes before using.

                It looks like they used 8 cups of milk and 2 cups cream.  The batter bowl used for the milk looks like a 2-quart (8 cups) then they added milk or cream from the other measuring cup  to make 10 cups.

                I was wondering if anyone has tried this recipe yet?  With the mistakes in 2 different parts of the recipe I was wondering how it turned out and what you added as far as cream and salt?

                I would add the cream!!  You can't ever have too much cream!!

                There was cream used on today's show in the Bechamel. It does not appear in this recipe!
