Zucchini and Potatoes Jambot
Ingredients

1/4 cup extra-virgin olive oil
1 small yellow onion, chopped
2 potatoes, peeled and cubed (slightly larger than zucchini cubes)
2 zucchini, cubed
Coarse salt
Ground black pepper
1 teaspoon dry Italian seasoning (or a combination of oregano and thyme)
Chopped parsley, for garnish (optional)

Directions
Heat a 12-inch straight-sided skillet. Add oil, onion, and butter. Add potatoes and cook 10 minutes, stirring occasionally. Add zucchini, salt, pepper, and Italian seasoning and saute 8 to 10 minutes more, until zucchini are just tender. To serve, garnish with parsley.

This is a fantastic recipe, it's something hubby and I started making out of the blue! (we did not see a recipe for it, we made it up!) So, what I'd like to add is what hubby and I did! Having a garden & having Xtra veggies, we not only diced up Zucchini, we also diced up cucumber (yes, it's delicious stir fried), sometimes we dice up green tomato, onion, gr.pepper, red ripe tomato! Make a one pan dinner and add diced ham or kolbasi slices! This recipe is endless with what you can do with it!

Love this recipe. A variation of this recipe has been in my family for years. Like this, in particular, because it is made on top of the stove. My family recipe was made in the oven. This is a very quick and tasty version. The name of the recipe, in Italian, simply means everything together. We made this recipe with all the veggies found in the crisper, thus the reason for longer cooking time. This is a time saver and an excellent side dish.

also, may i suggest the potatoes be specified yukon golds, instead of generic potatoes, since someone not paying attention to the photo might use russets and that might result in a potato hash.
again, this is really good. it makes zucchinis worth eating.

good thing i saw lucinda make it on tv or i wouldn't have attempted such a poorly written recipe, which would've been a shame: it's DELICIOUS. that said, someone needs to do a better job editing this recipe!
1. zucchini listed twice on the list of ingredients
2. butter left out but makes appearance in directions (sans amount)
3. heat level unspecified, a problem since onion is added first - dish is cooked at least twenty minutes so anything higher than medium would have resulted in burnt bits.
